Patriotic Cupcakes

How excited am I about these cupcakes you might ask? SO EXCITED! This is a set of custom cupcakes I made for a patriotic-themed party a client is putting on. It's also the first time that I've used fondant on cupcakes this extensively. I was a little hesitant because I wanted to make sure that there was enough frosting so that the cupcakes still tasted good so I really swirled it on thick under the ones with the most fondant.

WHAT'S YOUR OPINION?

In keeping with the patriotic theme, now would be a good time let your voice be heard!

I must say, sifting happens to be one of my least favorite activities. In fact, though I know that it can affect the results in a recipe, there are often times that I will forgo the act altogether when I'm feeling particularly anti-sifty. This usually applies more to sifting powdered sugar than sifting flour as I feel like powdered sugar is unusually difficult to sift. At least, I feel like it takes for freaking EVER!
This is what I look like when I know I have to sift something.

With that in mind, I ask you: to sift, or not to sift?  And if you sift, HOW do you sift?  Do yo use a sieve?  A hand-crank sifter?  A pull-handle sifter?  Do tell!

  4. I definitely use a sieve and when sifting icing sugar I use the back of a spoon. But like you I hate doing it!

    The cupcakes look great by the way :)

  17. I love that post!! As for sifting I only make myself do it on a couple of recipes that I KNOW it makes a difference other I pretend to sift by using a little less flour and giving it a swift swish with my el-whisk-o. :)

  18. I LOVE sifting - I use a hand-crank sifter and it makes me feel all old-timey.
